The Matisse art on the walls (some good reproductions and some signed originals) take one away from the garish outside world. The music (clearly audible but not distracting) centers on the golden Piaf age of French popular music. Even the lighting is ideal: generally intime but with subtle extra light directed at the table so that you can appreciate the beautiful presentation of the meal. Then, of course, there is the food. I would have to go to operatic lengths to describe it. Five years ago, for our 50th wedding anniversary, Mary and I first discovered Restaurant Matisse. It was a revelation. I had the best bouillabaise of my life, and Mary found out about preserved lemon. Last week, for our 55th anniversary, we made a special trip to Victoria in order to revisit Matisse. What a pleasure! John recommended a unique dry sherry based on white pinot aged in cognac casks...light yet with plenty of fruit and a whiff of cognac. A perfect start. Then came a chilled soup made with fresh heirloom tomatoes lightly flasvored with lovage. Next a salad with exotic greens with a subtle dressing. Mine included asparagus, slices of lobster tail and avocado; Mary's salad also had a warm tart made with caramelized onions and goat cheese. Finally we were treated to a fine duck cassoulet made with lentils instead of white beans. Inspired! All this together with a lovely dry Canadian semillon blanc. We do not often have dessert, but John persuaded us to indulge. Mary tried the bread pudding, and I had the finest chocolate mousse I have ever experienced. The evening was memorable in every way and well worth the trip to Canada. We will definitely return. "
